Dark and Sweet, Peanut Brownies


At my home, everyone loves these bittersweet chocolate rich brownies. And I definitely love to bake them. Baking has become a passion for a few years by now and I guess I can talk ceaselessly about cakes, baking and food. However, here goes a simple recipe for these devilish chocolate treats. In fact brownies can be of many varieties like fudge-y, cake-y, chewy and blondes, this one is cake-y type.

Ingredients that you would need:

Butter or vegetable oil: 1 cup
Egg (large): 3
Baking powder: 1tsp
Sugar: 3/4 cup
All purpose Flour: 3/4 cup
Cocoa Powder: 1/2 cup
Dark Chocolate chunks/Chocolate chips: 1/2 cup
Chopped and Peeled Peanuts/Any other nuts: 1/2 cup.

How to make:

The process of making brownies is fairly simple. At first sieve together the baking powder, cocoa powder and the flour and keep aside.

In a large bowl put the egg yolks and whites together, start beating with an electric mixer. For better volume, you can put your bowl over warm water ( remember, never over hot/boiling water). 


Start adding sugar bit by bit and continue beating until you come up with a creamy, foamy mixture (it should take about 8-10 minutes).


Add butter/oil slowly and continue beating for another 3-5 minutes. Stop beating, take a wooden or a plastic spatula and start folding in the sieved flour, cocoa powder and baking powder. Try not to over mix, just gently fold in with the beaten egg mixture. 


Also fold in the chocolate chunks/chips and the peanuts. Pour the mixture on a greased baking tin and bake in a pre-heated (200 degree celcius) oven for about 30 minutes. (the temperature and time might vary for your oven) If you want a moist cake, you should bake less and for a hard and biscuit type texture, the cake should be baked for 40-45 minutes at lower temperature.


Tips for the microwave oven: 

You can use the same recipe, just add a little more baking powder and bake in a microwave proof bowl for just 2-4 minutes based on the moisture you want in your cake.
